Creamy Tomatillo Guacamole

Ingredients

  • 4 tomatillos, husked and rinsed
  • 1/2 cup cilantro, chopped
  • 1/2 cup white onion, chopped
  • 1 jalapeno, chopped
  • 2 avocados, chopped
  • 1 tsp kosher salt

Preparation

  1. Boil 4 husked and rinsed tomatillos in a pot of water, 5 minutes.
  2. Puree 1/2 cup chopped cilantro, 1/2 cup chopped white onion, 1 chopped jalapeno and a splash of the tomatillo cooking water in a blender.
  3. Drain the tomatillos, add to the blender and pulse.
  4. Add 2 chopped avocados and 1 teaspoon kosher salt and pulse.
  5. Season with more salt to taste.
