  • 2 cups gluten-free baking flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 4 large eggs
  • 2 cups mashed ripe bananas (4-5 medium bananas)
  • 1 cup granulated sugar
  • 1/2 cup unsweetened applesauce
  • 1/3 cup canola oil
  • 1 tsp vanilla extract


  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine flour, baking soda, and salt until evenly distributed. In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vanilla until smooth. Stir wet ingredients into dry ingredients until moistened.
  3. Transfer to two 8x4 inch loaf pans thoroughly coated with cooking spray.
  4. Bake at 350° for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to place on wire racks.
