Specialty Bakeries Cater To Those With Food Sensitivities

In Scotland, a pair of mothers was inspired by their children to open a specialty bakery, catering to people whose diets are restricted. Today, they are two of the country's most successful bakers, says the Daily Record.

Dr. Sally Beattie and Emer Bustard both have kids with dairy intolerance. Both food scientists, they soon realized that millions of other people in Europe also have food allergies. They used their food skills to create mouthwatering and awardwinning cookies, biscuits, and other baked goods. Each recipe is formulated without gluten, wheat, eggs, dairy, or hydrogenated fat.

They started selling their creations at local farmers' markets. Now, they sell in Sainsbury and Waitrose stores throughout Britain through their brand name Lazy Day Foods. Their best-known recipes include chocolate fudge cake, shortbread, and chocolate ginger confections.

The pair opened their bakery with the goal of making the best 'free-from' treats available. Beattie and Bustard say that 'free-from' food should not be free from taste. Explaining how their business got started, Dr. Beattie says "Both Emer and I worked as product development scientists for Kerry Foods, so we set about developing some recipes for my personal use and the family’s use. We were making all the treat items we had been missing. It’s not critical to have a cake or biscuit, but it’s a treat that people with intolerances and allergies – and people who have chosen a vegetarian or vegan diet for ethical reasons – shouldn’t have to miss."

Emer Bustard added "People with food allergies tend to feel segregated, always having something different. One of our key objectives was to provide treats and cakes, which everyone could enjoy." The bakers are now in discussion with major retailers in Britain and abroad – meaning that you may soon see their treats in a store near you!
