A Red White, and Blue No Top-Eight Allergens Treat

July 4th is almost here, a day when many of our festivities are decorated in the red, white, and blue colors of our nation’s flag.

The white is said to stand for the ideals of purity and innocence. Red represents hardiness, and valor. The blue signifies justice, vigilance, and perseverance.

Here is an easy to make red, white, and blue sweet treat that can add some fun and flavor to your 4th of July celebration.

Microwaveable Fruity Rice Squares

This recipe is milk, fish, shellfish, egg, tree nuts, peanut, soy, and wheat free*, makes 24 servings, and takes about 25 minutes to prepare.

You will need:

  • 5 tablespoons dairy and soy free buttery spread, divided
  • 10 cups egg-free miniature marshmallows, divided
  • 13 ounce box blue colored berry gelatin
  • 13 ounce box cherry gelatin
  • 1 cup gluten free pretzels, broken into small pieces
  • 6 cups puffed rice cereal, divided

Preparation:

  1. Grease a 9 x 13 inch pan, and set it aside.
  2. In a large microwave safe bowl, melt 2 tablespoons buttery spread. Stir in 3 cups marshmallows; microwave for 30 seconds and stir—repeat until marshmallows are melted.
  3. Stir in cherry gelatin until it’s dissolved; then stir in 3 cups puffed rice. Press mixture into the prepared pan, and top with pretzel pieces plus 1 cup marshmallows; set aside.
  4. In the microwave safe bowl, melt 1 tablespoon buttery spread. Stir in 3 cups marshmallows; microwave for 30 seconds and stir—repeat until marshmallows are melted. Spread mixture evenly over the pretzel layer, and set aside.
  5. In the microwave safe bowl, melt the remaining 2 tablespoons buttery spread. Stir in 3 cups marshmallows; microwave for 30 seconds and stir—repeat until marshmallows are melted.
  6. Stir in the blue gelatin until it’s dissolved; then stir in the remaining 3 cups puffed rice. Spread over the marshmallow layer.
  7. Let the treat cool; then cut into 2 inch squares and serve—or store in an airtight container.

One 2-inch Fruity Rice Square contains 132 calories, 27g total carbs, 2.5g total fat, 1g fiber, and 1.5g protein.
