homemade chocolate lollipops are awesome!

Tonight my DH and I made chocolate lollipops that are so awesome and look store bought. they are safe for PA, TNA, dairy and egg allergic and soy and wheat allergic. check this out:

1 8 oz package of Bakers unsweetened baking chocolate ,brokenin pieces (i called and the bakers chocolate is safe)
1/4 cup plus 1 tsp of shortening
1/8 tsp vanilla extract
2 cups confectioners sugar

in medium bowl, microwave chocolate and shortening on high for 1-2 minutes, until mixture is melted and smooth when stirred. add vanilla extract. gradually stir in confectioners sugar. if mixture becomes to thick, microwave to soften again or knead with hands. Here, you can roll it out with a rolling pin between two pieces of wax paper and use cookie cutters to cut out interesting shapes before putting in refrigerator to harden. Or, at this step, you can microwave it a bit to soften it. then, use spoon or other device to put it into Wilton's candy lollipop molds (bought at Party City or Michaels) and then put in lollipop sticks and refrigerate. then they pop out of the molds easily and you can cover in plastic (decorated) and put a nice bow around it. you can also color the chocolate but i have not done that yet. And it TASTES SO GOOD. or you can just spread out in pan. cover tightly. refrigerate until firm. break into pieces. store well covered in refrigerator until ready to eat

Mmmm...These sound good. I plan on making them in October when I can order chocolate through the mail and the weather is cooler. Did you try any other chocolate brands yet? I found Bakers to be a very viscous type of chocolate, especially when I use my tempering machine to dip other goodies like truffles and fruit creams. The flavor is adequate, but I want to try VNF's unsweetened and Scharffen-Berger also. If you use another brand before October, let me know which one you like better. I never really thought about taste differences, but recently I had some Hershey milk chocolate chips, and then tasted some VNF milk chocolate ships, and the VNF ones were superior. But then again, that's according to my taste buds. Different people, different preferences, right?

I made my own pops out of Vermont Nut Free last January. My son's b-day theme was Elmo and I found some Elmo pop molds. They came out great, the only thing is, you really have to tap on the molds when the chocolate is melted to get all the air bubbles out. I'm curious about the Baker's chocolate. Was this a Canadian company. It would be wonderful to be able to buy baking chocolate at the grocery store.
