Amazing eggless, dairy-free orange cake

1-1/2 cups (375 mL) all purpose flour
3/4 cup (175 mL) granulated sugar
1 tsp. (5 mL) baking soda
1/2 tsp. (2 mL) baking powder
1 cup (250 mL) orange juice
1/3 cup (75 mL) vegetable oil
1 tsp. (5 mL) grated orange zest

Grease two 8 or 9-inch (20 or 23 cm) round cake pans or line a muffin pan with paper liners. Preheat the oven to 350o F (180o C).

In a medium bowl, stir together the flour, sugar, baking soda, and baking powder until well mixed. All at once, add the orange juice, vegetable oil, and orange rind.
