May I suggest just staying completely away from pbj? Kids can live without it, they can have it at their houses, and it helps you avoid cross-contamination! If you are going to offer pbj, you must be SO careful(ie, the
peanut butter knife should never dip in the jelly). There are many many children who are ULTRA sensitive, and who could enjoy buying lunches(at school) without the worry of the cross contamination. Our elementary school still serves pbj as a choice, but their serving practices are different. There are no snacks for sale in the school cafeteria, that contain peanuts or peanut oil.

Good Luck in your venture Debbie! Some places that peanut turns up unexpectedly...Spaghetti sauce...chilli as a thickening agent in both cases. Also pepperoni on pizza has caused anaphylaxis. Some very likely places to find cross-contamination...deli counters... bakeries... donuts... cookies... Thai, African, or Chinese foods. Will you prepare or distribute the food? Will it be hot, cold, or both? I would love to hear more about your project, I may be able to pass on more pertinent information.
