I have to say I'm a "bad Mommy" too. I made some exceptionally good chocolate chip cookies yesterday...and, um...they're just about gone...no thanks to lil ole me! They were my breakfast, lunch and dinner! I finally tweaked the recipe just right so they were crispy on the outside but chewy inside and LOTS of chocolate chips.
I made them for my DS to make him feel better, who had sliced his thumb clear through to the fat on Sunday and required several stitches. So I shouldn't have even eaten any! Poor guy.
That looks gourment to me, MB. Dinner for us last night was steak and boxed macaroni&cheese. We had no veggies for once. Tomorrow it is french toast, turkey bacon, and a fruit smoothie. And I just can't remember what thoughtless meal I am supposed to make today. (Although I know it will include my fave--creamed spinach! Mmmmm.)
When I did my shopping on Monday, I thought I'd treat myself to some incredibly easy meals this week [img]http://uumor.pair.com/nutalle2/peanutallergy/smile.gif[/img] ! Everyone has to treat themselves to Q&E (Quick and Easy). We moms deserve it.
Oh MommaBear, that looks and sounds delicious. Of course, if I tried to serve that to my family, I would have heard a big "YUCK!" And really, except for the dessert, it's a pretty healthy meal, too. And dessert is supposed to be high in fat and sugar, otherwise, who wants it?
For dinner last night we had spaghetti with either meat sauce or butter, with parmasan and romano cheese, tossed salad, steamed carrots, blueberries and plums (I usually put out some fruit, since my kids aren't fond of veggies). The adults drank wine, kids drank lemonade. For dessert we each had 1 homemade chocolate chip cookie with milk.
Last night?
DD had ham on sourdough with a salad composed of carrot shreds, hearts of romaine, and cantaloupe.
DH and I ate wild rice salad on hearts of romaine. I make wild rice salad with cooked wild and brown rice, blue cheese (Gorgonzola this time) diced granny smith apples, dried cranberries, frozen green peas, shredded chicken and red grapes. We like it dressed with a nice balsamic vinaigrette.
I also like Feta in salads A LOT. I make a divine Mediterranean tabbouli with fresh cucumber, cherry tomatoesm, Kalamatas, red onion, and feta-- finished with olive oil, of course. MmmmmmMMMMmm.
We also ate the rest of a cantaloupe and got into the watermelon sorbet. (home made of course)
Tonight? BLTs made with vegannaise on my own SF sourdough bread. Yum.
And cherry tomatoes. We'll be eating those for every meal during the next month or so, I suspect. [img]http://uumor.pair.com/nutalle2/peanutallergy/eek.gif[/img]
We also have lovely strawberries and blueberries in the yard right now... and the apples will be ready soon. [img]http://uumor.pair.com/nutalle2/peanutallergy/smile.gif[/img]

That and sourdough bread are my family's passions.
DH is also planning on doing some BBQ this week... and a fish fry.

Corvallis Mom, where do you get the bulgar for your tabbouleh? I miss having it, but I don't trust bulk bulgar at the health food store, and I think that Near East is a "may contain". I'd love to know your source, or if you substitute something else for bulgar.

"America's Cut" Pork loins (on sale, a buck a piece) coated in Jewel Brand "Coat and Bake" Pork flavor. (20 minutes from oven to plate, boneless)

Coin sliced steamed Organic carrots. (I add a few teaspoons of sugar to the water. Ok. So they are boiled. I had an uncle who used to drink the cooled water used to steam vegetables. Blah. I figure I'm being good just to put something [i]orange[/i] on my cubs' plates.
Lipton Sides "Alfredo" noodles. I *think* it also comes under the "Knorr" label, but not sure.....

Possibly with disasterous consequences. I mean, I still hold my breath on quite a number of occasions. It's how, after some soul-searching, my family handles things. Individual Mileage May Vary. Just describing the highly individual, personal, and possibly unique circumstances in the constellation of *MY* family. Happenstance. Could be the *wrong* way, or just what works for *my* family.
