Here's my recipe:
1 box Jiffy corn muffin mix
1/2 tsp xanthan gum
1 tub applesauce
1/3 cup soymilk
1/2 Tbsp egg replacer powder
2 Tbsp water
Preheat oven to 400. Line muffin pan with paper cups. Combine muffin mix with xanthan gum in a bowl. Mix egg replacer with water and add to muffing mix. Add applesauce. Stir until combined. Spoon into muffin cups. Bake for 20 min. Test with toothpick.
