For each person, bake one med-lg russet or other baking potato for about 1 hour at 360 F
Then just supply toppings such as:
cheese, bacon bits (or crumbled cooked bacon)
cooked broccoli, spaghetti sauce, sour cream, etc. (pretty much anything you and your family like).
Kids love this, and better yet they will actually eat what they make (most of the time)
Nachos are another winner for the same reasons! There we do salsa, avocado bits, tomatoes, olive slices, diced green chilies, sour cream, cooked shredded chicken or beef, sometimes cooked black turtle beans (which my daughter loves- thank heaven she tolerates other legumes ok).
It also is a way for a kid w/multiple allergies (like mine) to feel that they still get to eat "cool" food.
We happen to eat a lot of Mexican food because my daughter is not dairy allergic, but can't have wheat, soy, or eggs.
(If you are just starting to do the family cooking thing, go easy on yourself and do real simple stuff like this at first.)
