Wacky cake for 30 ppl????

My friend has very nicely offered to bake a cake w/me for her son's bday so my ds can eat it [img]http://uumor.pair.com/nutalle2/peanutallergy/biggrin.gif[/img]

I make a version of the Chocolate Wacky Cake, which comes out good. But I've never made it for such a large group of 30 people. I'm wondering how the cake would come out w/out eggs? Would it just flop in the center?

Anyone make cakes w/out eggs for 30 people? Any suggestions? Would it be better to make 2 cakes?
