My family is considering a vacation in the Cancun area next month; staying at an all-inclusive resort. Does anyone know if the Mexicans in general use a lot of peanut in the preparation of their meals? I've sent the hotel a letter, but haven't heard back from them yet. When they do, I'll let you all know what I learn!

We stayed at the Moon Palace on our honeymoon and I can't wait to go back! It was off the main strip so it was quiet and there were no wild college parties going on. Of course we were able to take the bus to the strip when we needed some fun. The place where we stayed had several restaurants, 2 main hotels, night club, and so much more. I highly recommomend. All this being said,
I would be soooo careful of any hotel that they truly understand the PA. LIke someone already said, stay with the big names and talk to US Corporate!

I went to Cancun and stayed at the Grand Oasis. I ate there everyday for breakfast and I ate at many of the major restaurants in the area and had no problem at all. I even ate at the TGIFriday's there and I usually do not eat there in the States.

I know some types of authentic enchiladas use peanut as a sauce thickener- as do some chili recipes.

Be careful of the food in Mexico. Quite often ground peanuts are added to mole (MO lay) sauce. This is a sauce that is often used in tamales and for enchiladas.
I haven't noticed the use of peanut oil, but some of the pastries may have peanuts or almonds. Also watch our for chocolate, hot chocolate, and chocolate products.
If you know someone who speaks Mexican Spanish, have them write down the words for nuts, peanuts, etc. Also have them write a short paragraph about the peanut allergy. The people in Mexico love children and will try to help you all they can.
I usually feel safe eating enchiladas with verde (VER de -- green) sauce which is usually made with tomatillos. I also eat tacos, fajitas, and most other foods. You will be pretty safe with rice and refried beans as they use lard in the beans -- not peanut oils.
Have a wonderful time.
