Pumpkin Cake Recipe

Hi all,

Here is a wonderful and easy Pumpkin Cake recipe.. I made it in a Bunt pan and it was super!! I did have to increase the baking time to 50 mins from 40 mins..

2 cups sugar
1 cup vegetable oil ( OR Butter- Melted )
4 large eggs
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon Vanilla
2 cups pumpkin puree or cooked mashed pumpkin

Directions for pumpkin cake
Combine sugar, vegetable oil (or Butter), eggs in a large mixing bowl; mix well. Sift dry ingredients into a separate bowl; stir into oil mixture, beating well. Stir in pumpkin puree.
Pour batter into two greased and floured 9-inch round layer cake pans. Bake at 350

I have a recipe for Pumpkin cupcakes that are awesome and so easy.
They don't really taste like pumpkin, more like a chocolate muffin. You could try to use a yellow cake mix, it might work and taste more like pumpkin, I just haven't tried it.
1 bx devil's food cake mix
1 small can pumpkin
Mix well,they will seem to be too dry but don't be tempted to add anything else.
Scoop into 10 cupcakes. (they don't really rise)
Bake 400 for 18-20 min. try not to over bake them.
