pTony Roma's Onion Rings/p
p 6 each White onionsbr /
1 cup Milkbr /
3 each Eggs, beatenbr /
Saltbr /
2 cups Pancake mix /p
p Slice the onions crosswise and separate into rings./p
p Combine milk, eggs, and salt to taste in mixing bowl./p
p Soak the onions in the mixture about 30 minutes./p
p Place pancake mix in a shallow bowl./p
p Heat oil for frying in skillet to 375 degrees./p
p Remove the onion rings from milk mixture, dip in pancake mixbr /
and place in hot oil. Fry rings until golden brown and drain onbr /
paper towels. Pack fried onion rings solidly, but loosely, withoutbr /
pressing, into an 8x4" loaf pan. Bake at 400 degrees 10 to 15br /
minutes. Turn onto serving plate./p
