OMG, just realized my fav cake is egg free!

I made a dessert this past weekend for my family that my mom used to make for us when we were little. We always called it "chocolate pudding cake", but in reality it is more like a "hotfudge brownie cake". It is an "upside down" cake that has a layer of hotfudge on the bottom and a brownie type cake on the top. To serve it you dish it out and flip it over on the plate...and top with vanilla ice cream if so desired. It just dawned on me that it was egg-free...so I thought I would post it here for anyone that cannot have eggs!

Here is the recipe:

Stir together in bowl:

1 Cup flour
2 tsp baking powder
1/4 tsp salt
3/4 cup sugar
2 tbsp cocoa (we trust Hershey, but any brand will do)

Stir the following into above mixture...
1/2 cup milk
2 tbsp shortening, melted*

Spread the batter into 9" square pan**

In separate bowl stir together:
1 cup brown sugar
1/4 cup cocoa

Sprinkle the brown sugar/cocoa mixture over batter.

Pour 1 and 3/4 cups of HOT water over entire thing.

Bake at 350 degress for 45 minutes.

When it is done the brownie part on top will feel firm, however, the "hot fudge" part on the bottom will still be quite liquidy until it cools down. It is great to serve warm (you can reheat in 275 degree oven or microwave).

*This is a really old recipe, so I would imagine you could use 2 tbsp of oil...? I always just melt the shortening in a small pan over low heat, but I "think" vegetable oil be the same thing.

**For a larger pan, just double everything and put into a 13 x 11 pan... and add about 10 minutes to the baking time.
