Hi I am currently investigating allergies and intolerances and am struggling getting people to interview regarding their own intolerances. If anyone could answer my questions that would be fantastic! [img]http://uumor.pair.com/nutalle2/peanutallergy/biggrin.gif[/img]

1) What is your food allergy/intolerance?
2) How long have you been a sufferer?
3) How did you discover you were a sufferer?
4) What symptoms do you get when you eat anything with what you suffer from in it?
5) How difficult do you find it to cater for (avoid)?
6) What is it like when you go out to restaurants, have takeaways etc? Is this a possibility?
7) Is there any particular dish that you would like to eat which you cant because of your allergy?

I'll speak on behalf of my 10 year old son.
1) What is your food allergy/intolerance?
First off, food allergy and intolerance are
different and should not be confused. Allergies are what we are talking about here on this site. They can be life threatening. Intolerance may include uncomfortable symptoms but are not life threatening. My son is allergic to peanuts, tree nuts, and shellfish.
2) How long have you been a sufferer? Diagnosed at 2 years old after first ingestion.
3) How did you discover you were a sufferer?
From a full blown allergic reaction.
4) What symptoms do you get when you eat anything with what you suffer from in it?
It can vary for all from reaction to reaction but in general, tightening in the throat, immediate significant congestion, choking, and sometimes hives.
5) How difficult do you find it to cater for (avoid)?
It requires neverending diligence, constant vigilance, constant label reading, and question asking but you get used to it. [img]http://uumor.pair.com/nutalle2/peanutallergy/smile.gif[/img]
6) What is it like when you go out to restaurants, have takeaways etc? Is this a possibility?
Yes, we do go out to eat on occasion. Again, we ask a lot of questions each time. Fast food is more consistent in their ingredients therefore easier to deal with.
7) Is there any particular dish that you would like to eat which you cant because of your allergy?
My son would like to eat all of the things that he is allergic to! He loves to try new foods and is a bit resentful not to be able to eat shellfish in particular. He is very careful, however.

2) How long have you been a sufferer? age 16 from berries, age 27 from peanuts
3) How did you discover you were a sufferer?
covered in hives when 16, ate peanut M& M's when 27 and also was covered in hives
4) What symptoms do you get when you eat anything with what you suffer from in it?
hives all over, lips swell, inside of mouth swells, eyes swell
5) How difficult do you find it to cater for (avoid)? I eat at home which makes it easy to avoid.
6) What is it like when you go out to restaurants, have takeaways etc? Is this a possibility? I very rarely go to a restaurant. I just don't feel it is worth all the anxiety.
7) Is there any particular dish that you would like to eat which you cant because of your allergy? Scrambled eggs, my mother's meatloaf, my mother's stuffed peppers, Italian Christmas doughnuts...family receipe with lots of eggs

No worries about being curious. I am currently doing a project on allergies and intolerances for Home Economics which is like Food Technology at college and so am trying to interview people to get primary research (a necessary element for the project) unfortunatly i only know one person with a peanut allergy and so am struggling getting people to interview. If you feel uncomfortable then u dont have to answer the questions but that is what it is for!

1) What is your food allergy/intolerance?
peanuts, tree nuts, wheat, rice, peas, corn, dust, mildew, trees, grass, animal danders, wool -- are the main allergies
2) How long have you been a sufferer?
all my life (now age 63)
3) How did you discover you were a sufferer?
I had rashes, exzema, asthma and finally anaphylactic reaction to almonds and later to peanuts from early childhood.
4) What symptoms do you get when you eat anything with what you suffer from in it?
Most things I can eat in small quantites without problems, but not peanuts or tree nuts.
I react with ingestion, with smell, and with touch.
With peanuts and tree nuts, I get red all over, itchy (starts with hands and ears and spreads all over my head and then my body. Then I get hives, on body and in mouth. Then I get asthma and start to swell. My face swells, my throat swells, and I can no longer breathe. At this point, I can barely communicate. I also am extremely sick at my stomach if it is an ingested nut.
When I feel these reactions coming, I must get to a hospital immediately for epinephrin. I also carry an epipen at all times, and when I travel, I take several.
5) How difficult do you find it to cater for (avoid)?
Not at all. I am a forceful person and insist on having no peanuts around. I get extremely ill from the smell or having it on my skin. I don't kiss or hug or touch anyone who has nuts -- husband gave up peanuts for the most part due to this reason. I just read labels and eat those things I know are safe. Husband is a chef and cooks safe foods for me.
I have traveled all over Europe, Russia, parts of Asia, Mexico, and Central America. I learned to read labels in several languages. I know that some foods are pretty safe everywhere.
I am a meat and potatoes person, so steaks and other beef dishes make me happy. I buy fruits, veggies, sausage, and bread to keep in my room,
6) What is it like when you go out to restaurants, have takeaways etc? Is this a possibility?
I ask about foods, and usually talk to the owner or a cook. Having been in the business, I expect they will be HAPPY not to have me die in their restaurant. I did tell a waiter once who was not being cooperative with me, that if I died at his table, I could not leave a tip and it would scare all his other customers out of the place. His attitude changed right away.
I do not usually eat oriental foods, especially Thai foods, unless I am totally comfortable with their use of nuts. Other oriental foods sometimes use peanut butter for purposes such as sealing spring rolls, etc. Occasionally, I find a place where I know I am safe. I never have European pastries due to their use of almond extract.
I seldom eat dessert or candy, so this is not a concern.
I present seminars often and speak at conventions. I usually find a server who will take good care of me there, and present a generous tip for this purpose. I then write the hotel/restaurant and commend the server.
I eat weekly at a local service club meeting, and the waitress always remembers my allergy to nuts, and she makes sure that my food is safe. I give her presents occasionally, which she protests, but I know she appreciates the thought. She is now a friend, not just someone I encounter regularly.
7) Is there any particular dish that you would like to eat which you cant because of your allergy?
I cannot imagine wanting to eat something that I don't eat. I guess I am just used to being careful.
I have never eaten a peanut butter sandwich. I did almost buy the farm from a peanut butter cookie once. For some reason, I couldn't smell the peanuts in it. No nuts of any type are allowed in our home. Everyone in the family reads labels. My friends cater to my nut allergy, and I feel safe with them. They also watch out for me all the time, and usually ask where to find my epipen, just in case it is needed.
One of the sneakiest ways of ingesting nuts is in salad dressing, so I usually have a non oil based dressing like bleu cheese. I find out if items are fried in peanut or other nut oils.
Most of the time, I never think about the allergy, and haven't had to go to the hospital for this for over 12 or 13 years.
Flying is the worst thing. I am having a problem right now with an airline about serving nuts on the plane. I have to have a letter from my doctor and make lots of phone calls. Then they will serve pretzels instead, and ironically they are cooked in peanut oil. Ironic, isn't it. I don't eat on airplanes. I can't control the food there, so I bring my own, and drink juice, milk, and coffee.
99% of the people I encounter are helpful.

2) How long have you been a sufferer? Probably always, but formally diagnosed at age 2 1/2.
3) How did you discover you were a sufferer? Contact reaction to peanut butter.
4) What symptoms do you get when you eat anything with what you suffer from in it? He has never ingested peanuts; his only reactions have been from contact and inhalation. They include hives, coughing, facial swelling. From tree nuts he has all of the above plus excessive salivation. From sesame, hives. Never ingested chick peas.
5) How difficult do you find it to cater for (avoid)? It would be a lot easier if product labelling was more accurate, but it is not as hard as other foods like dairy, egg or wheat.
6) What is it like when you go out to restaurants, have takeaways etc? Is this a possibility? It is a possibility, but it is always stressful. We limit ourselves to a few safe choices.
7) Is there any particular dish that you would like to eat which you cant because of your allergy? Chinese food!

Tree nuts
2) How long have you been a sufferer? 2 years - I was 38
3) How did you discover you were a sufferer?
I ate some hershey kiss almonds and I got a hive on my lip, then both lips swelled to 5 times their normal size, hives on trunk, swollen uvula in mouth.
4) What symptoms do you get when you eat anything with what you suffer from in it?
See number 3.
5) How difficult do you find it to cater for (avoid)?
It is difficult to try new foods - keep eating the same "safe" foods.
6) What is it like when you go out to restaurants, have takeaways etc? Is this a possibility?
I ask questions before I get there, when I get there and if I am not comfortable, I either don't eat or bring my own.
7) Is there any particular dish that you would like to eat which you cant because of your allergy?
I LOVED nuts, cashews, peanuts, candy bars with nuts, ice cream, cakes, strudels, all types of bakery.

I'm answering for my 2-1/2-year-old son.
1) What is your food allergy/intolerance?
Peanuts and almonds
2) How long have you been a sufferer?
1 1/2 years
3) How did you discover you were a sufferer?
Anaphylactic reaction (after mom ate something with nuts, then held him to feed him a bottle).
4) What symptoms do you get when you eat anything with what you suffer from in it?
DS has never eaten anything with nuts in it. But his reaction to touch involved hives, eyes swollen shut, lips swelling, and screaming at the top of his lungs.
5) How difficult do you find it to cater for (avoid)?
Very difficult. So many things either contain nuts or are cross-contaminated. It's also difficult to get a straight answer from food manufacturers when you call. (No one has ever answered a question for me about natural flavorings, for example. Most of the companies just don't know or don't care. And just try asking someone at a McDonald's or Burger King if they use peanut oil. Most we've encountered don't want to bother to find out for us.)
6) What is it like when you go out to restaurants, have takeaways etc? Is this a possibility?
We only take DS to a few restaurants, and then only when we're in a town that has a hospital. (When we went to a rural area for vacation last year, we packed his own food.) Once, we had problems with a waitress who thought "life-threatening nut allergy" meant it was okay for my son to have eggs cooked in a pan that had just been used with peanut oil. Thank goodness we questioned her until she told us that.
7) Is there any particular dish that you would like to eat which you cant because of your allergy?
Cookies and cakes from commercial bakeries, breads, Kellogg's cereals, jelly beans, Thai and Chinese food, etc.
