and you were going to cook for a food allergic individual (allergy of your choice), which allergy would it be (theorizing this was the only food allergic individual at the dinner and no one in your immediate family had food allergies.)

Milk

Peanut

Nut

Egg

Soy

Wheat

Assuming that *I* don't count as the immediate family LOL ...
I would probably cook to make things safe for a nut allergic person, because that is what I am used to doing.
HOWEVER, I regularly cook for a very dear vegetarian friend of mine. Apart from being strictly vegetarian, she has a wheat / gluten intolerance and is not keen on dairy or egg, so I am a pretty good label-reader and "make from scratch" person!

I think as long as you are cooking and baking from scratch that the easiest would be for a nut allergy.

I can easily entertain with regular meals and eliminate nuts, peanuts, and eggs. So any or all of those is easy for me now, including desserts, lasagna, bread, salads and such.
I do tend to prepare Italian alot when I entertain(large amount of food in one dish sort of thing and easy to make ahead), so cheeses(dairy) might be most challenging for me to eliminate.
However, I now know a dairy free margarine and can easily do a roast and veggies type dinner as well.
Wheat and soy could be the most challenging as they are often the hidden ingredient. I would always try my best to accomodate what I *know* about, and definately have at least several safe offerings if I did a buffet style party. Did that recenly when I knew a child with milk allergy *might* be present. In the end, she was not, but there were chioces there and in my home that would be safe for her. becca

A few years ago I would have panicked at the idea of cooking for an allergic person.
Now? I think I can handle almost anything! LOL.
I would be most stressed by the wheat allergy though. We're already pretty much soy free, nuts and peanuts too, of course. I *could* handle milk, but not milk and soy at the same time.
I had to avoid milk for my dd, and soy for my ds for a period of 6 months, and that was very hard.

If I were going to eliminate all of them, I would be cooking for my youngest son. It isn't easy and is just starting to bother him that he can't eat what everyone else eats. How do you make a wheat, egg, milk free cut-out cookie?
I agree with the others, nut-free is easiest.

I found it interesting that so many answered the original question with fish/shellfish. I agree it [i]seems[/i] the easiest, but, I couldn't choose that one because I know how easy it is to assume nothing in your fridge has fish. Or that you'd immediately recognize the word as meaning fish. (Just like peanut and milk have different names in ingredient lists.)
Personally I'd just be thankful if I only had to deal with one allergen for one individual at one dinner. [img]http://uumor.pair.com/nutalle2/peanutallergy/smile.gif[/img]
Living the way I live now I think I could handle making a meal for a person with any of those allergies (assuming just one) as long as answers were only a phone call away.
On the other hand, if "no one in my immediate family had food allergies" I'd probably pick peanut to avoid for a meal. Since it's labelled for on so many products, I'd probably [b]assume[/b] it was easy to avoid. Even pre-allergy days I did my own baking, so I'd [i]assume[/i] that would be safe. Of course, I'd be in for a shock when I discovered how many of the baking ingredients I used to use have a peanut warning.

I've had to omit all of them when cooking for Jason and Allison. It's not a big deal to me anymore.

I've not actually tried these as cut out cookies and I do add either regular sugar or double the maple, but here you go Nancy:
Simple Rice Cookies
2 cups rice flour
cut and then rub in 1/2 cup organic shortening
(or mix in 1/2 cup oil or use organic coconut oil/butter as
shortening)
sitr in 1/2 cup organic maple syrup to make a soft dough. (If using regular sugar, may need to add more liquid to mixture)
You can roll in into balls, drop from spoon etc... If you adjust the flour
amount to get a stiff dough, it's even great for cookie cutters. You can
also add whatever they tolerate to make them more interesting. I added lemon juice to make lemon snaps that turned out pretty good. Bake 10-12 minutes at 350.
Oh, yeah- to have to do without *just* one of those ingredients would be a dream. I'd probably choose nuts/peanuts though. I wouldn't choose either of them separately as we treat them as a unit due to cross contamination issues. The hardest one that I've had to cook around so far is wheat.

I would definitely choose to cook for the allergic individual who had the peanut or nut allergy.
I am very use to this and actually don't find it to be that big a deal anymore.

Having just had Thanksgiving at our house and having an individual with a Milk allergy, well, that was a little difficult to handle. She asked that we not change our menu to cater to her at all but I didn't feel comfortable and really wanted to have everything dairy free. Unfortunately, it wasn't possible. I felt really bad not being able to have everything dairy free. She didn't mind at all and had actually brought some food for herself. I wouldn't want to have to deal with a Milk allergy.
