I just made the best soy strawberry ice cream!

Cannot believe I did this, because I am so sick of cooking. This recipe is peanut free and milk free. You can also substitute the eggs with egg replacer if you need to:

In a bowl mix:
4 egg yolks
1 cup powdered sugar
1 teaspoon corn starch

Mix the above three things with electric mixer on low until blended (about two minutes). Slowly add 2 cups soy milk, while mixing with mixer (about another two minutes). Add 1 teaspoon vanilla and mix. Add 1/2 cup Hershey`s strawberry syrup and mix well (another two minutes). Put the whole thing in the fridge 3-4 hours. Then put it through ice cream maker about 35 minutes.

This recipe is awesome. I cannot believe I came up with this. If you skip the strawberry syrup, it makes great vanilla soy ice cream. I have tried the vanilla soy ice cream using egg replacer, using the recipe on the egg replacer box for the egg yolks. I have not tried the strawberry with egg replacer.

I have also make this recipe using Hershey`s chocolate syrup instead of the strawberry syrup (still using 1/2 cup). It makes great chocolate soy ice cream.
