I just wanted to share with you something I felt was a success. My DD 1st B-day today and I made an AWESOME dairy free, egg free, nut free cake. Guests RAVED. My goal is to be a terrific allergen free cook (although I've never been much of a cook period) so she does'nt feel like shes missing out.
I know it will be harder when she gets a little older, but she got though her 1st B-Day around a ton of food without any kind of reaction! I was just super worried. I know I can't let my guard down just because of today, but it actually was a good day!
GOOD DAY

Happy bday to your little gal, and kudos to you!
Happy 1st b-day to your dd and kudos to you! Care to share the recipe?
That's really awesome. I know it's a lot of effort. Congrats to you for doing it and for doing it successfully.
I love it! Congrats!
And this is a success to share with dd as she grows and looks at things in mags, resturants etc... and then you can think together and see how you can make a "X free" whatever.
We are still working on the nut free baklava though.
Thanks for your responses. The recipie is on on allrecipies.com, under Egg free, Dairy free, Nut Free Cake. I modified it by using 1/4 c. of apple sauce and a product called Egg Replacer(whole foods)folowed the directions for one egg. I used the "Enjoy Life" chocolate chips. To my suprise and everyone elses it was wonderful. I guess appple sauce is used often in baking to replace eggs. - Mindy
Yeah!
Isn't it the BEST feeling knowing you can make something yourself that is safe and delicious?
I think it's been wonderful to know every single ingredient that goes into my DS's body--and mine too--from a safety and general health and well-being aspect.
Good for you!
