I found this recipe on one of my favorite sites, Allrecipes.com. If you haven't been to the site, people make and leave reviews for recipes so you can read what they think.
Anyway, I'll be making this one next week. I'll let you know how it tastes!

It looks like the wacky cake recipe, and it is awesome, better than cake with eggs IMO. I made a lemon version that was awesome as well.

Omit the cocoa from the wacky cake, I used a generous sprinkling of Mccormick's Lemon Peel in the batter and a couple spoons of lemon jc (subtract a little water so you don't get too much liquid), I still used vanilla, but you could probably use lemon extract too, if you want a yellow lemon cake you'll need to add a couple drops of food color, real lemon zest would probably color it some as well as flavor it if you can't use dyes.
I've subbed OJ and orange peel in for the water as well, though I didn't like the orange as much as the lemon, maybe orange extract would have been better as I think the OJ cooked too fast, it got browned, but was more than edible.
This is a pretty hardy recipe as I've not screwed it up yet trying to make different flavors.
My next try will be strawberry, I think if I thaw and drain the juice off some frozen strawberries it might work.
