Cocoa Quickies

1/2 cup rice milk
1/2 cup margarine
2 cups white sugar
6 tablespoons unsweetened cocoa powder
2 tablespoons Sunbutter (optional)
3 1/2 cups rolled oats
1 teaspoon vanilla
1 cup shredded coconut (optional)

Place the rice milk, margarine, sugar, cocoa, and Sunbutter in a medium sized saucepan. Bring mixture to a full rolling boil. Boil for one minute. Remove from heat, and stir in vanilla and oats. Mix in coconut, if desired. Drop by teaspoonfuls onto waxed paper. Let stand until set.
(I recommend refrigerating to speed setting)

Yield: approx 24 cookies

I have tried these. I leave out the Sunbutter. Had ana. shock from Sunbutter. They are so good and easy. Feels like you are cheating to be eating these great treats.
