Thanks for the idea, how do you sweeten coconut, just add some sugar to it?
You know, Smack, I never bothered to sweeten the coconut. I thought about mixing some powdered sugar in the blender with the coconut flakes, but didn't bother. I figured the recipe had enough sugar in it anyways. My husband (ultra picky) actually liked them. And he says he doesn't particularly care for coconut. I didn't have any yet because Saturday is reserved as my junk food eating day. I can't wait for tomorrow!!! Just absolutely drooling at this point everytime I look in the fridge.

I made the Coconut Joys for our family picnic today. They were a hit! My can was cleaned out--nothing left. I'll make more next year for hearty appetites.
