Chocolate Ice cream-eggless/nutless

2oz Baker's Bittersweet bakingchocolate squares
1 C sugar
pinch salt
2 C wole milk
2 teaspoon pure vanilla
2 C heavy cream

Melt chocolate in top of double boiler. Heat milk in mircowave til warm. Add sugar, salt and heated milk to melted chocolate, blend well making sure to is well mixed. Cool in refrig. or set top double pan in ice water to cool down completely. Add vanilla. Refrig. 1 hour. Add 2 cups (one pint) heavy cream. stir well. Process in ice cream maker following their instructions. 25min in the in Cuisinart machine.

pThis is my son's favorite ice cream.br /
I've been making it for years now and have learned a few other tricks for making it. My son doesn't like it with any specks of chocolate that doesn't blend in sometimes. I hold a strainer above the opening to the ice cream maker and pour cooled mixture in the machine. It is hard for him to scoop for firmed in freezer. Solution is some of the processed mixture is put in small ndividual containers. He can get these himself without waiting for parent or older brother to serve. Hope this helps MyNick to use your new ice cream machine. Some others jsut omit the egg called for in ice cream recipes- no substite added back in. It seems all eggless ice cream melts more qiuickly then ones containing egg./p
