Chicken like Momma Makes

2 lbs chicken tenderloins (skinned, boned....does it come any other way??)

2 cups white flour

Salt

Pepper

one egg

1/4 cup whole milk

oil for frying

large no stick pan and lid

ziplock type bag, one gallon

fire

Put chicken in bag

add milk

sprinkle with desired amount of salt. "Dash" maybe.

Squish.

add flour slowly, squishing occasionally, shaking bag (while closed), until chicken is breaded and bag is dry with flour. (Might need more than two cups, who knows.)

Add in single layer to preheated (medium setting) pan. use about enough oil to make a 6 inch wide puddle in pan. When chicken is completely added, most of oil should be soaked up. Juice from chicken will help fry the other side. Sprinkle with pepper. Cook until tanned on one side.

Turn chicken over. Repeat tanning and peppering.

Tanned?

Good add a bit of water. (Oops! didn't list that did I?) Maybe a quarter cup. Sizzle steam sizzle. Cover with a quarter inch gap around one side of pan open to let out some steam. Turn to "low". Simmer until done. (I use a meat thermometer). Might have to add a touch more water and continue simmering. (Do not soak, just enough to sizzle and steam).

Adaptation of the week:

*My* version of "General Tsau's" Chicken. (sp?)

While chicken is cooking:

Stir fry carrots, celery, broccoli, green/red peppers, onion........ or whatever suits you. (Other stir fry veggies may be added as desired)

Cover with some of the chicken when chicken is done.

Drizzle with Sweet and Sour sauce of your choice.

(Adjust for FA where necessary).

I usually make my own. I found my recipe on the web. Contains pineapple, brown sugar, orange juice, cornstarch, vinegar, yellow mustard, and ketchup or tomato paste. Sometimes I get crazy and blend in some garden peppers. [img]http://uumor.pair.com/nutalle2/peanutallergy/biggrin.gif[/img]
You need to prepare it a day in advance.
I'm pretty cautious about recommending brand name stuff, particularly if FA is involved. Hope you understand. I mean, if my son tolerates certain products, maybe it's just him. I mean, what if he actually ever outgrew his food allergies (he is also PA/TNA and lentils with a lot of food aversions), and I didn't know it? Don't even know if it is possible , but ya never know................
