I have worked for Applebee's for over 10 years. I know, in our Corp. store they have never used peanut oil. They do have walnuts and peacan crusted items and there is no dedicated fryer.
As a Manager I always try to suggest fresh items (broc., grilled chicken, salad) or pre-packaged items (mac & cheese, applesauce) They do teach a degree of food allergy awareness and are careful about cross-contamination. Problem with that, if you didn't prepare it yourself, are you sure its safe?
I have two boys with nut and egg allergies. They have only been out to eat a few times and it was at Applebee's where I went in back and made their food myself. We do not have a very large comfort zone. I always suggest to parent that they obtain the allergy number and call in advance. This way you have some knowledge going into a restaurant what is safe and what to avoid.
