Egg Free Cookie Recipes
For people with an egg allergy, it can be hard finding recipes that will let them enjoy homemade cookies.
You can try one of the recipes listed below to give you a choice of cookies, which do not contain eggs. If you cannot tolerate milk products, you can substitute almond or soy milk in the place of regular milk in any recipe.
Soft Molasses Cookies
2 c. & 2 tbsp. flour
1 tsp. of ginger
¼ tsp. salt
1 tsp. cinnamon
2 tsp. baking soda
1 tbsp. of egg substitute
½ cup shortening
½ cup of sugar
½ cup of molasses
6 tbsp. of water
½ cup of raisins or cranberries (your choice)
Preheat the oven to 325 degrees F. Sift together the flour, spices, baking soda and salt. In a separate bowl cream together the shortening, molasses, sugar and egg substitute. Mix the dry ingredients into the wet ingredients. Stir in the water and raisins or cranberries. Drop onto a greased baking sheet by the tablespoon and allow 2 inches of space between each cookie for spreading. Bake for12-15minutes.
No-Bake Oatmeal Cookies
1 ½ cups of sun butter
1 tbsp. of orange juice
1 ½ cups of soymilk powder
1 ½ cups of quick oats
½ cup of grated toasted coconut
2 tbsp. of soy margarine or coconut oil
¼ tsp. of salt
½ cup of maple syrup
Mix together the sun butter, orange juice and oil. Mix in the soymilk powder until all the ingredients are well combined. In a separate bowl, mix together the grated coconut, oats and salt until all combined. Melt the soy margarine in a pan over medium heat and add the maple syrup. Combine all ingredients together and mix well. Spread onto an 8 x 8 cake pan lined with parchment paper and refrigerate until set up. Cut into squares and serve.
Cranberry Banana Cookies
½ cup of dried cranberries chopped up finely
½ cup of 2 medium sized smashed ripe bananas
1/3 cup of butter or margarine
½ cup of unsweetened apple juice
1 tbsp. of flax seeds, sunflower seeds, chia seeds or wheat germ (your choice)
1 tbsp. of flaxseed meal
3 tbsp. of water
½ tsp. of vanilla extract
1 cup of quick oats
½ cup of all-purpose flour
1 tsp. baking soda
Preheat oven to 350 degrees F. Grease cookie sheets with non-stick spray. In a blender combine the flax seed meal and water until it is foamy. Set aside. In a bowl, stir together the cranberries and flour, so the cranberries do not stick together and make lumps. Add these ingredients to the mashed banana, apple juice, seeds and vanilla and mix until well combined. Stir in the quick oats and blend well. Drop by spoonful onto the greased cookie sheets and flatten with a fork. Bake for 8-10 minutes.
