Current law dictates that any of the top 8 allergens that are ingredients must be called out in plain language on the label. There is currently no requirement, and no standardization, for cross-contamination. You must call on products to inquire about shared lines, shared facilities. Check company websites for FAQs containing information about cross-contamination.
Be aware for refined oils such as heat-extruded peanut oil, it is legally considered "safe" with no requirement on the manufacturer's behalf to list it. For specifics of the legal requirements of top 8 allergen labeling refer to FALCPA.

Consider submitting the dressing to FAAN for testing. If it contains enough peanut protein and was not labeled correctly the manufacturer will need to correct it. That would be the only way to prove the reaction was from that dressing and that it was peanut present in it.
