Ingredients

  • 1 1/2 cups allergy-free flour
  • 1/2 tsp xanthan gum
  • 2 tspn baking soda
  • 1/2 cup allergy-free chocolate chips (such as Enjoy Life Semi-Sweet Chocolate Chips)
  • 3 large ripe bananas, mashed
  • 1/4 cup or 2 ounces shortening
  • 1/3 cup granulated sugar
  • 3 tbsp brown sugar
  • 1 tbsp lemon juice
  • zest of one lemon
  • 2 tbsp rice milk
  • 1 tsp vanilla extract
  • 3 tsp Ener-G Egg Replacer
  • 2 tbsp warm water

Directions

  • Preheat oven to 350°F
  • Lightly grease two six-muffin trays or one twelve-muffin tray
  • Sift flour, xanthan gum and baking soda together in a large bowl
  • Gently stir in the chocolate chips and set aside
  • Mash the bananas in another container or process for a few seconds in a blender or food processor
  • In a separate bowl, mix the shortening, granulated sugar and brown sugar and beat until fluffy
  • Stir through the lemon juice, zest, rice milk and vanilla extract
  • Add the mashed bananas
  • In a small bowl, dissolve the egg replacer in warm water then combine with the other wet ingredients
  • Then, add the wet ingredients to the flour mixture and fold through gently
  • Spoon the mixture into each muffin holder until about two-thirds full
  • Bake for 15 - 20 minutes or until golden brown
  • A skewer or toothpick inserted into the top of a muffin should come out moist but, not overly wet
  • Makes 12 muffins

Variations

Hummingbird Muffins: replace the chocolate chips and three bananas with two bananas and one cup of chopped pineapple.

Apple Spice Muffins: instead of the chocolate chips and bananas, use three cups of apple sauce or chopped stewed apples and half a teaspoon each of cinnamon, cloves and nutmeg.

Sweet Pear Muffins: as above, replace the chocolate chips and bananas with three cups of chopped canned pears.
