Chicken and Vegetable Stew

Ingredients

  • 3 cloves of garlic, minced
  • 1/4 onion, finely diced
  • 1/2 tsp fresh ginger, minced
  • 2 tbsp cooking oil
  • 3 roma tomatoes, diced
  • 1 large can of stewed tomatoes
  • 2 bay leaves
  • 1 tbsp granulated sugar
  • 4 - 6 chicken drumsticks
  • 1 - 2 cups of water
  • salt & pepper to taste
  • 1 large sweet potato, chopped
  • 2 potatoes, chopped
  • 1 - 2 cups bella mushrooms
  • 1/2 tsp fresh rosemary leaves
  • 2 cups or handfuls of baby spinach
  • 1/4 cup or 4 stalks of green onions, thinly sliced
  • Optional: 1 tsp crushed red pepper flakes

Directions

  • In a large pot, sautee the garlic, onion and ginger over medium heat for 2 - 3 minutes
  • Next, stir in the roma tomatoes and continue frying, crushing the tomatoes as they cook through
  • Add the can of stewed tomatoes, bay leaves and sugar
  • Stir the pot contents and then place the drumsticks evenly throughout the mixture
  • Bring the stew to a boil, then cover and simmer for at least 30 minutes or until the chicken is cooked
  • As the stew is simmering, pour only enough water into the pot to cover the drumsticks
  • Add salt and pepper to taste
  • For a spicy version of the stew, stir in the crushed, red pepper flakes
  • Then, add the sweet potato and potato and continue to simmer for another 10 minutes
  • If needed, season the stew again with salt and pepper
  • Stir in the mushrooms and sprinkle the rosemary leaves over the stew
  • Cook for another 2 minutes
  • Add the spinach and scatter the spring onions over the stew contents
  • Simmer for another 1 - 2 minutes or until the spinach is wilted but, still a vibrant dark green

Serving Suggestions

Ladle stew into large soup bowls and serve with bread of choice

Serve stew over freshly steamed jasmine rice
