Basic Cookie Dough

Ingredients

  • 1 3/4 cup allergy-free flour
  • 1/2 tsp xanthan gum
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2/3 cup shortening
  • 2 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 1/2 tsp Ener-G© Egg Replacer
  • 2 tbsp warm water

Directions

  • Preheat oven to 365°F
  • Lightly grease one or two cookie sheets
  • Sift the flour, xanthan gum, baking soda and salt together in a large bowl
  • Set flour mixture aside
  • Mix the granulated sugar and brown sugar in a separate medium-size bowl
  • Add the shortening and beat until fluffy, mix in vanilla extract and lemon juice then add to flour mixture
  • In a small bowl, dissolve the egg replacer in the water
  • Add the dissolved egg replacer to the rest of ingredients
  • Mix bowl contents until well combined
  • Drop tablespoonful (for large cookies) or teaspoonful (for small cookies) balls of cookie dough onto sheets about 2 inches apart
  • Press each ball down with a fork or your thumb to flatten the dough
  • Bake for 8 - 10 minutes or until light golden brown around the edges
  • Cookies will still be very soft and pale in color
  • Cool slightly, and then remove from sheets to cool further on racks

Serving Suggestions

  • Lightly dust cookies with powdered sugar for a simple, satisfying treat.

Chocolate-Chip Cookies: Stir in 3/4 cup allergy-free chocolate chips (such as Enjoy Life© Semi-Sweet Chocolate Chips) to dough mixture prior to baking.

Lemon Cream Cookies: beat 1/2 cup powdered sugar, 1/2 tbsp lemon zest and 1/4 cup shortening until smooth and fluffy. Spread the top of cookies with lemon cream and sprinkle with extra lemon zest or sandwich together two cookies with the lemon cream.

Vanilla Cream Cookies: beat 1/2 cup powdered sugar, 1/2 tbsp vanilla extract and 1/4 cup shortening until smooth and fluffy. Spread the top of cookies with vanilla cream or sandwich together two cookies with the vanilla cream.
