I consider us to have a fairly loose comfort zone or middle of the road by what I've seen on the boards.
We are trying to plan our 504 for DS. I would like to know what are some of the basic things in some of your plans. DS will start Kindergarten in the fall. He has had a good experience with a pre-school that was not peanut free. However, we did have some precautions in place and the staff was made allergy aware.

Yes, we have planned like you to be very involved with the field trips.
I'm just brainstorming right now and trying to get it all together, kwim?
Just looking for ideas that I may not have thought of.

Yes, we all have our comfort zones. Many of these decisions are personal, and what feels right for you and the child.
One of the main things I had put in our 504 was that either my husband or I would accompany our daughter on all field trips.
The trips are often group things involving more than one class, and the teachers are harried, trying to keep tabs on everyone. And I was not comfortable with an unknown parent chaparone being responsible for watching my daughter and using the epi-pens. So we made sure we are always included in field trips.
