Amy...thanks for the link--looks good and real easy! I don't think DH would go for it for the Seders but I'll try it during the week.
Speaking of Passover, does anyone have a good TNT recipe for a cake/torte? It must be easy enough for a 5 1/2 year-old (DS) to make with a rather inept-baker of a Daddy. My birthday falls during Passover and they always make Mommy a birthday cake/treat. And...anyone want to share what's on their Seder menu? (I haven't made up my mind yet so am looking for ideas.) Thanks!

As for your birthday cake, I think they'd better stick with one of the Passover brownie mixes, LOL. Passover baking can be pretty tricky, even for accomplished bakers. Maybe they could handle this one:

I did get a macaroon recipe from the same website, and when I asked for an almond subsitute, she told me to make matzoh butter crunch without the chocolate, grind it up and use the equivalent amount:

I think it's worth a try - I really miss a good macaroon.
I was actually thinking of making a cheesecake, using a sweetened matzoh meal crust. I just haven't figured out how to do it yet. I guess by melting butter, adding sugar and pressing it into a pie plate? Or maybe just do a crustless one.
I'll post my menu when I figure it out - I guess it depends on how many people end up coming.

I have a few passover recipes that i know are nut free and great tasting. I just have to find that cookbook and i will get back to you.

Amy...here's my own recipe for cheesecake that I use to make--use to because now DH has to keep to a low saturated fat diet. Maybe I'll try revamping it for him. Anyway, I created this recipe ah so many Passovers ago. It was always a hit and so pretty if served on a tall cake stand. If you try it, let me know what you think. (I'm still going to write a cookbook someday!) Thanks!
Chocolate Matzo Crust
1 cup matzoh meal 10 oz margarine, melted 2 Tbs cocoa 2 Tbs sugar Thoroughly mix all ingredients. Firmly press into the bottom and sides of a 10-inch deep-dish pie plate.
Marbled Cheesecake 2 8-oz packages cream cheese, softened 3 eggs 3 Tbs milk 3/8 cup sugar 1 1/2 Tbs vanilla 1 1/2 tsp lemon juice, fresh 1/2 cup chocolate chip, melted TOPPING: 1 cup sour cream 1/4 cup sugar 1 tsp vanilla 1 tsp cocoa Place all ingredients except chocolate chips and topping in a blender and whirl for 1 minute. Pour into pie shell, leaving 1/2-3/4 cup in blender. Add melted chocolate chips to blender and whirl 30 seconds. Scrape down sides and whirl again for 30 seconds. Drop chocolate mixture by tablespoonfuls in a circle into pie shell. Using a cake tester or knife, start in the center to swirl chocolate in an increasingly wider circle. Bake @ 375° for 20 minutes. Cool. Mix together sour cream, 1/4 cup sugar and 1 teaspoon vanilla for topping. Spread on cheesecake. Bake @ 475° for 10 minutes. Cool, then chill thoroughly. Sprinkle with cocoa before serving.

Tahnks, Donni. I think I'll try it this year - looks delicious. I've gotta pull up the Matzah Roca recipe again - (was it yours Amy?) - we've been making it for the last few years. It's soooo much better tasting than the (unsafe) store bought. By the way, I emailed Manischewitz to see if they have any products to add to their nut-free list (on their website), and they said that the fruit gel slices are safe. So is their ketchup. The rep. said to call or email with any other product questions. I stick to their company for any packaged stuff - has anybody had any luck with contacting any of the other companies?

I hope to try the chocolate matzoh recipe this year.
While we're sharing...anyone interested in a TNT Passover Brownie recipe? My DS loves it even more than regular brownies from Grandmom! When he was in play group, they all--even the moms!--thought the brownies were great! Try them and let me know, ok? Brownies for Passover
1/2 cup stick margarine 2 cups sugar 4 eggs 1 cup matzo cake meal 1/2 cup cocoa 1/3 cup potato starch 1/4 tsp salt 1/2 cup water 1 tsp vanilla extract
Cream margarine; add sugar; add eggs one at a time. Add vanilla extract. Mix dry ingredients together and add; stir well. Stir in water. Bake in 9 x 13 pan, @ 350° 30-35 minutes.
