Thought I'd share some yummy Salad recipes.
[b]Layered Spinach Salad[/b]
In salad bowl layer:
spinach
hard boiled eggs, sliced
Kraft Peppercorn Ranch dressing
mushrooms, sliced
cheddar cheese, shredded
[b]Broccoli Salad[/b]
1 large broccoli bunch, cut up
1/4 cup red onion
1 cup sunflower seeds
10 pieces cooked bacon, crumpled
dressing:
1 tbsp white vinegar
2 tbsp white sugar
1/2 cup miracle whip
[b]Pasta Salad[/b]
1 pkg Catelli Bistro Rainbow pasta, cooked and cooled
red onion, chopped
2 celery stalks, chopped
1 red or green pepper, cut into thin strips
1 bottle Kraft Signature Collection, Classic Herb dressing
hmm the next time I make Broccoli salad I might throw in some Craisins!
Tomorrow, I am making the Layered Spinach Salad for dinner at my sisters. Tonight we are having Baby Spinach with cucumbers, celery, mushrooms and grilled chicken. Baby Spinach is my favourite!!
A few more salads ...
[b]Strawberry Spinach Salad[/b]
dressing
Whisk the following and cover and refrigerate until ready to use:
1/2 tsp lemon zest
2 tbsp lemon juice
2 tbsp white wine vinegar
1/3 cup sugar
1 tbsp vegetable oil
salad
8 ounces (1 1/2 cups) strawberries, hulled and quartered
1/2 medium cucumber, sliced and cut in half (remove seeds)
1/4 small red onion, sliced into thin wedges (1/4 cup)
1 package (6 ounces) baby spinach
Place spinach in large bowl, add strawberries, cucumber and onion. Whisk dressing and pour over salad, gently tossing. Serve immediately
[b]Greek Salad[/b]
1 english cucumber, cut in bite size pieces (sliced and cut into quarters), peel on
3 tomatoes, cut in bite size pieces
2 stalks celery, sliced
1 sweet red pepper, cut in bite-size pieces
1 small red onion, thinkly sliced
1 can colossal pitted black olives, drained and cut in half
1 1/4 cups memories of Greece Olive Oil, Lemon & Oregano Marinade (I used Kraft Greek dressing)
1 tub Goat's Milk Feta Cheese, drained and crumbled

My S-I-L has made the strawberry/spinach salad. It was very nice and different! Mmmm. becca
I know this salad isn't as creative or fancy, but right now my husband and I are addicted to making/eating the following salad:
Lettuce, shredded cheeze, red onions, and chicken tenders (fried or grilled. We top it off with a dressing mixture of ranch and honey french (yes, mix the two together). Oh and we also top it off with fritos (instead of croutons).
It's kinda like a southwestern, chicken taco salad..... love it....
[b] Cranberry Salad[/b]
6 oz baby spinach (can substitute Romaine lettuce)
Craisins original flavour (I used about 1/3 of a 170g package)
1/4 cup Sunflower seeds
dressing:
9 tbsp Olive oil
3 tbsp red wine vinegar (can subsitute white vinegar)
3-4 tbsp brown sugar
It was easier to re-raise than to search my recipe books for these recipes.
Will add another salad recipe after my daughter's First Communion Celebration tomorrow (or perhaps after my nephews Confirmation on sunday). We will be eating alot of salads this weekend!!
[b]Fruited Spinach Salad[/b]
1 can (11ounces) mandarin oranges
1/4 cup olive oil
3 tablespoons raspberry jam or spreadable fruit
1 tablespoon red wine vinegar
1 package (10 ounces) fresh spinach, torn
1 red apple, chopped
Drain oranges, reserving 1/2 cup juice. In a jar with tight fitting lid, combine oil, jam, vinegar and reserved juice; shake well.
In a large salad bowl, toss oranges, spinach and apple. Serve with the dressing.
6-8 servings
I made the strawberry spinach salad the other night and it was a hit.
I would double the cucumber, half the onion, and I used olive oil.
Where do you find sunflower seeds that do not have the risk of x-contamination?

I typed the recipe as it was in the book/magazine but when I make it, I use Olive oil all the time. I don't like alot of onions, but other family members do, so when I take some salad I usually pick out the excess onion and put them on DH plate [img]http://uumor.pair.com/nutalle2/peanutallergy/biggrin.gif[/img]
There was a thread discussing what brand of sunflower seeds are safe. If I find it, I'll re-raise it.

Did the cranberry salad last night. It was okay, but not as good as the strawberry one. Also, I think you could cut way back on the dressing. We both thought it was way too oily.

These sound great, Codyman! Especially the Broccoli Salad. I've made one similar using Peas ( just thaw out the frozen ones - no need to cook them) - it has bacon, sunflower seeds, Miracle Whip - and I throw in a handful of Craisins, too.
