Peanut-Free, Dairy-Free, Egg-Free Soynut butter cookies
Here's an egg-free soynut butter cookie recipe. Enjoy!
3/4 c soynut butter
1/2 c earth balance shortening (transfat free!)
1 c dark brown sugar
3 Tbsp soymilk
1 Tbsp vanilla extract
2 Tbsp applesauce
1 Tbsp canola oil
1 3/4 c flour
3/4 tsp salt
3/4 tsp baking soda
Heat oven to 375. Combine soynut butter, shortening, brown sugar, soymilk and vanilla in a large bowl. Beat at low speed until blended. Add applesauce and oil. Combine flour, salt and baking soda. Add to sugar mixture at low speed. Drop by heaping teaspoons onto cookie sheet. Flatten slightly with fork. Bake at 375 for 7 to 8 min. Cool 2 min, remove to foil to finish cooling.
