lemon bars?

anyone know of a homemade lemon bar recipe? i'd probably have to dr it up to make it eggless, but i need a starting point at least. thanks

Hi Batrice,

Here's a recipe, but eggs are a pretty substantial part of it. Good luck! Let me know how they come out, and then post - I'm sure Becca will be watching!

Lemon Squares

Crust:
2 cups all purpose flour
1/2 cup confectioners sugar
1 cup margarine (I use butter) melted

Filling:
2 cups granulated sugar
4 eggs
4 Tbsp. all purpose flour
4 Tbsp. lemon juice (5 if you like it tart)

1. Preheat oven to 350. To make crust combine flour, confectioners sugar and melted margarine. Press into 13" X 9" baking pan. Bake for 20 mins. Allow to cool.

2. To make filling, mix together (do not beat) sugar, eggs, flour and lemon juice and spoon into crust. Bake 15 minutes longer. When filling has cooled, sprinkle on confectioners sugar. Cut into squares; makes about 24 squares.
