Interbake Foods (Choc Ice Cream Wafers)

I have been buying soft-serve vanilla ice cream for my PA son from a local (not Carvel)store. In order to get comfortable with the choc wafers they use for the ice cream sandwiches, I traced the cookies back to Interbake Foods. The scalloped wafers are made on a non-dedicated line in a nut-free facility (although they are adding a peanut butter cookie on another line sometime this year). The round wafers are made on a dedicated line at another facility. The company seems very allergy-aware. The contact person is Nicole Peterson, who is the Technical Services Manager. Interestly, her email to me this morning indicated that they make Girl Scout cookies too. My local ice cream shop owner was kind enough to let me buy a package of just the wafers so I could make the sandwiches myself.
