Help for a friend

Please help me! I have a dear friend who has a one year old with allergies to everything. Peanuts, eggs, dairy, soy, green beans, most meats.

She was nursing but is now pregnant and has not been physically able to continue, but even when she was she would react to unknowns in her breast milk. She is struggling so much right now because she is at such a loss.

Her DD has baked beans for snacks, white northern beans, olive oil in rice milk for fat, etc. Is there anyone out there with suggestions?? She is one year old and does drink from a sippy cup and eats semi-solids.

She got donation breast milk from a hospital because her case is so severe and gave some to her dd last night. Head to toe hives. Found out the breast milk was free of everything but the soy. So now she has a freezer full of breast milk she can;t even use!

My DD, now 2, has/had almost the same allergies. She outgrew soy this year and at one time or another we were on an elimination diet for pork, chicken and beef. She is also allergic to dairy, peanuts, eggs and green beans. We now avoid all beans.

She has a limited diet but is doing fine. She never would drink rice milk and hates soy milk now. She mainly drinks water and Calcium fortified OJ. Here is what she eats - homemade banana muffins or Enjoy Life bars for breakfast.

For lunch she eats Tyson dino bites (if she can do chicken) and Heinz ketchup. Sometimes she will have a sunbutter sandwich (watch soy allergy). Her other option is a hamburger or turkey burger (not sure what meats are okay).

Dinner - she usually eats what we eat, or some variation on it. She loves applesauce. Lenders bagels are good. She enjoys eating those like her "pizza" and dipping them into tomato sauce. I also add ground beef to the tomato sauce. She enjoys bacon and biscuits, or waffles with a little powedered sugar and fruit on top if we have breakfast for dinner. Toast with jelly is another option. Chicken breast or thin cut pork chops grilled with BBQ sauce. For veggies little pieces of steamed broccoli seem to be the favorite. She also eats lots of fruit.

Snacks are usually pretzles, fruit, craisins, fruit leather, mandarin oranges and either homemade or Enjoy life cookies. I hope this helps.

Thanks cgroth! I have a question. I would assume you have a recipe for waffle batter. Do you just use rice milk?

Does she have any "allergen-free" cookbooks?

I think FAAN puts one out or at least carries one. I know many of their recipes in their newsletters are free of the things you listed. However, they may not be suited for a one year old.

I don't know much about dairy allergies. Can she tolerate goat's milk? I believe our supermarket carries goat's milk yogurt in the natural foods section (Hannaford supermarket).

My 15mth old is allergic to most of the same stuff(she is positive to milk and eggs, but has problems and hives from green beans, corn, peas, turkey, soy and strawberries). She just weaned 2mths ago too...I still give her 3 bottles of ALimentum everyday. She also gets rice milk at meals or in her cereal(she likes rice crispies). But what has saved me in all this is keeping her on babay food. Honest, they're ingredients are simple and I know which ones to avoid(nothing with strawberries, no turkey dinners, no green beans etc...). I just find it easier, with sooo many foods causing problems to stick with baby food and formula for a bit longer. I plan to get her retested this summer and will tackle more solid foods, but for now I use baby food in addition to the few *solid* meals she can eat with no problems. Our allergist suggested givng her Alimentum(or Nutramagen) until age 2. Good luck....also, finding a good nutriotionist, one that will help you find foods, not just what to avoid....that is a key role(you might have to shop around, not all nutrionists deal the same with food allergies, find a good one!!) HUGS

There are elemental formulas which contain no whole proteins, just the building blocks of proteins that the body needs. These formulas provide complete nutrition for people with severe food intolerances or multiple fooda allergies. It might be worth looking into. One of them is called Neocate. Another brand is Elecare.

It is a very supportive group and they have a lot of good recipes in their database. I highly recommend it.

Sorry- She also has a wheat allergy. Ughh.

I have allergen free cookbooks, but not really good for a one year old yet. Also mine are nut, egg and dairy free not some of the others. Can you do a general substitution for all purpose flour or does it depend on what your making? ie)if I am making a banana bread can I just substitute with rice flour or doesn't that work??

Generally, it doesn't work very well to substitute straight rice flour for wheat. You will probably need to use a combination of flours and starches to get the right consistency.

I think sorghum flour is one of the easiest to use and has a nice mild flavor. Rice flour tends to make things very dry and crumbly. You need to use some kind of starch with it, such as tapioca or arrowroot starch.

Often, wheat free recipes will call for eggs which keep baked goods from being so crumbly. It's even trickier to get a good product that is wheat *and* egg free.

Here's a recipe for banana muffins:

3 ripe bananas
1/4 cup rice milk
1/4 cup canola oil
3/4 cup sugar
1 1/2 cup sorghum flour
1/2 cup tapioca starch
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 350. Mash bananas and combine with rice milk and oil. Mix dry ingredients separately and add to wet mixture. Spoon into paper lined muffin tin. Bake 20 min. Make 1 dozen.

Have her look at the Whole Foods Allergy Cookbook by Cybele Pascal. Many of the recipes are not suitable for a one year old, but there are several for biscuits, muffins and other foods that she would like. All recipes are free from the top 8 allergens. I checked it out from our local library and then bought it because I liked it.

My DD also ate baby food for a long time. It was safe and she liked it.

Kara, I hope the recipe works out. If it's too crumbly, you can try adding 1/2 tsp of xanthan gum. This is a great thing for egg and wheat free baking. It seems pricey, but a little goes a long way and it lasts for a very long time in the fridge (as long as it stays dry).
