Peanut-Free/Nut-Free Directory
Our directory is intended as a resource for people with peanut and nut allergies. It contains foods, helpful products, and much more.
We went to one of our favorite carry-out restaurants (a Chinese/Japanese restaurant) this evening and asked what items they serve contain peanuts (I realize the peanuts could cause cross contamination just by being there).
They said the only 2 things on their menu that contained peanut products were the Kung Pao items which have peanuts and the California Rolls which have peanut butter. I know the KP has peanuts in it but peanut butter in California rolls? Seriously? The C. rolls have sesame seeds on them so I'm wondering if they are confused by the question or just giving an answer about items with what they consider to be "nuts". That is my guess.
Any thoughts?

Could this be similar to the way some Chinese restaurants use pb to seal egg rolls? I haven't had a spring roll in awhile, so can't really remember if they tend to stay closed or not. Anyway, just a thought.

I should have added that I got the Cali rolls and couldn't taste peanut butter in them. My husband was picking up the food and that's what I'd ordered on the phone (he asked about peanuts when he got there).
If they really did put pb in there I would have never guessed from tasting the rolls or from what I know of making them. Since it isn't raw fish it is the kind of thing I might have given him to eat too.
I thought I'd post this so other folks could ask about their sushi in case their kids wanted to eat some!

From what I know of sushi making (several classes and cookbooks) sushi does not need anything but maybe a bit of water to seal itself (unlike an egg roll or perhaps a wonton bundle).
The special sushi grade rice and the seaweed do the trick themselves.
Maybe they have a type of spring roll also called California something?
Speaking as a Japanese-American who has been eating Japanese food all her life, I have never, ever heard of putting peanut butter in ANY sushi. That's just WRONG!
I try to stick to pure Japanese restaurants when I have my PA son in tow... no Japanese/Chinese or Japanese/Korean hybrids.

I'm addicted to sushi, was going to take a class on how to make it but the couple who make it in the grocery store I visit would go under
Question to anyone who makes it?
Can you freeze them already made?
Thanks
off to buy some sushi(I love the California rolls and the other one with the seaweed outside with spicy crabmeat in the inside)oh yummy

Never heard of PB in sushi but I did see once see a roll made with peanuts (I think little bits were sprinkled on it) at a sushi place in New York. It was acutally listed on the menu. Just goes to show you can never assume.
smack, you asked the exact same question I was going to ask! Sushi is my guilty pleasure -- I love it but its expensive where I live so I sometimes make my own and I have wondered if it will freeze. I guess I should just try it and then I'll know!
Sorry - double post. See below.

Smack, I have heard of a company that is just starting to sell frozen sushi (mostly commercially) that would be brought back to room tempature without (so they say) a decrease in the quality. They are using a patented process that removes the water from the fish / veg so things do not get mushy.
The fish itself is often frozen to kill parasites, particularly the salmon, but I think it is a flash freezing process.
I would think that suchi would not freeze well in a home kitchen setting.
Sorry for taking the PB sushi off topic!
I really think they must have been referring to the sesame seeds that the cali rolls had on them and calling that nuts. I couldn't see or taste any peanut butter on the rolls themselves. I'll question them further next time we get take out there. I won't give any to my PA son just in case!
Frozen sushi - I wish it was possible but it doesn't sound appetizing! Part of the allure of sushi is that it is fresh!

I'm re-raising this because I did CONFIRM that my local sushi shop DOES use peanut butter in the California rolls. The sushi chef says that he does not use it in any other types of the sushi he makes except that roll. And I made sure he didn't mean the sesame seeds.
I don't feed my son the sushi but I will not get the cali rolls anymore because of the ease of spreading peanut butter around. I would suggest that anyone who eats sushi - especially if you get it for your kids - to raise the issue with the chef!
It is weird - no doubt I've managed to find the only sushi chef in the world who puts peanut butter in his sushi...

I was thrilled to see this post! Shortly before my DD (15 mo) was dx with multiple allergies including PA (we suspected), I ate sushi and while I thought that I was being careful and I didn't think that there would be any peanuts in california rolls (not listed as an ingredient), my daughter got hives on her cheeks and head (where I kissed her). It went away with Benadryl (whew!) and when discussed with her allergist the following week, she told me that it was either a) PB in the roll - but unlikely OR (b) the sesame seeds OR (c) the soy sauce OR (d) cross contamination with peanuts.
As you have found, you just never know! Some days I feel like I have a handle on it for now and I let my guard down a bit and other days I feel like I am surrounded by peanuts, tree nuts, apples & oats!!!
Good luck!
I'm still shaking my head at the thought of PB in sushi... then again, I'm still aghast at the use of mayo in sushi.

California rolls contain crab, but most places around here use *mock crab*, which contains flavored fishmeat. I've seen all sorts of oils and fillers listed in the mock crabmeat. It's certainly something to be wary of.
And yes,I've seen local sushi shops have specialty rolls which contained PB--often desserty type specials. It's not a traditional maki ingredient, that's for sure.

Yes, the cali roll where we go is the "mock crab" and that is the part where he puts the peanut butter for some reason. I just wanted to clarify that I was talking about california rolls though and not a special dessert kind of sushi! LOL! They don't make any dessert items or actually anything else with peanut butter except that!

Something interesting that I thought I might add to this discussion: My husband purchased a container of Sushi, American Koshihikari Rice (basically short grain, sweet, sticky rice). It is supposedly perfect for us in Sushi or Asian cooking. On the back it lists a warning: Packed in a plant that handles nuts. So, even if the sushi is safe, the rice may not be. This is by Rice Select.
I bought Sushi on Friday at the supermarket. The Sushi chef was there, so I asked if he used peanuts or peanut butter. He couldn't speak English well, so I saw a jar of peanut butter by the bananas and showed him. He said "no." I'm not completely sure he knew what I was talking about! The sushi was for my husband, who's not allergic.
Re: freezing. Dh was dining with a coworker at a place that has some sushi. Not exactly a primo sushi bar, but a little mom and pop Korean place with nice plates and combos and such. They have some sushi. His cowrker waited 30 mins for the sushi he ordered and it was a bit frozen. When he complained, they said they were trying to thaw it because it had been frozen! So, apparently, I hope, it can be safely frozen. I am guessing they do this frequently(maybe even purchase it this way) and defrost it for serving daily. This guy has ith there regularly and enjoys it, except for this day. becca

I have never, ever heard of pb in California rolls. That is just disgusting. Usually they have cucumber, crab, avocado, maybe some wasabi, rice and seaweed.
PB? ewwwww.......gross!
You should try making your own sushi, it's way cheaper and kind of fun!
