Good cookie recipe

I know a lot of people on here deal with more than just peanut allergies. I felt like baking today and found this recipe for egg-free cookies. My family really liked how they turned out so I thought I would share it. Enjoy!

SUGAR COOKIE SLICES

INGREDIENTS

* 1 1/2 cups butter or margarine, softened
* 1 1/2 cups sugar
* 1/2 teaspoon vanilla extract
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt

DIRECTIONS

1. In a mixing bowl, cream butter and sugar. Beat in vanilla. Combine flour, baking soda and salt; gradually add to the creamed mixture. Shape into two 8-in. rolls; wrap each in plastic wrap. Refrigerate for 4 hours or until firm. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 12-14 minutes or until set (do not brown). Remove to wire racks to cool.

Thanks katelynl829 for sharing! It's always nice to have a great sugar cookie recipe on hand-you can do so much with them.

We too have an egg allergy and I have a few recipes on my site. I'm working on more as time allows.
