Eggless Eggnog

I was looking at eggless recipes and came across this one, sorry if it's a repost!

Eggless Eggnog

Servings: 8

1 (3.5 ounce) package instant French vanilla pudding
6 cups milk
2-1/2 teaspoons rum flavored extract
1/2 teaspoon nutmeg

1. In a large bowl, combine the pudding mix with 2 cups of milk,
following package directions; allow to chill for 5 minutes.
2. To the pudding stir in the rum flavoring and nutmeg, then slowly
mix in the remaining 4 cups of milk until the mixture is a thick but
drinkable consistency. Chill until ready to serve.

This is a recipe for an eggless & much lower calorie version of "Eggnog" -- Though I do love the full-up, homemade eggnog, this recipe is great tasting & easy:


1 cup sugar
1 cup dark rum
1/2 cup brandy
2 Tbsp. vanilla
1/2 gallon (8 cups) whole milk
Fresh grated nutmeg

Dissolve sugar in rum, brandy, & vanilla. Add milk & some nutmeg. Pour into freezer-safe container & freeze for 3 - 5 hours, or until slushy. (Can be frozen for a month.) Pour/scoop into glasses & sprinkle with more nutmeg. "Serves 8" -- 355 calories each.

Variations: I've used 2% and/or 1% instead of whole milk. Freezes faster & harder that way.
