Egg substitutions for cookies, cakes, etc...

I made the eggless pumpkin pie for Thanksgiving and it turned out great. Thank you for the great suggestion. I would like to bake some other goodies over the holidays. Does anyone have any recommendations for egg substitutes in cookies, cakes, etc...?

Here are some that I like:

In chocolate chip cookies, use 2 Tbsp baby food prune puree instead of one egg.

In cornbread muffins, use 1/2 Tbsp Ener-G egg replacer mixed with 2 Tbsp water, 1/2 cup (1 tub) applesauce and 1/2 tsp xanthan gum in place of the egg.

In pancakes, use 1/2 Tbsp Ener-G egg replacer mixed with 2 Tbsp water.

Instead of an egg in oatmeal cookies, use 1/3 c applesauce for each one. This works in brownies, too.

I actually think they are [i]better[/i] than the regular recipe. [img]http://uumor.pair.com/nutalle2/peanutallergy/wink.gif[/img]
