egg free soda cake

I don't know if this has ever been posted before, but I just made a great cake that couldn't be easier. You take any safe cake mix, any flavor, and a can of soda. I did chocolate cake with diet cherry coke.

I actually got the recipe from my mom and she got it at Weight Watchers. You can use yellow or white cake with Sprite, or any other combo you can think of. You mix the soda with the cake mix and bake according to package. It is delicious!

An added bonus for me was that I decided to try it in my fluted stone pan from Pampered Chef (bundt shaped pan). They have several microwave cake recipes so I tried this one in the microwave. It was as easy as pouring the batter in the pan and nuking it for 14 minutes. Perfect and simple.

I couldn't find a dairy free cake mix in the grocery store (we aren't avoiding dairy but a friend's son is DA) so I don't know if it would work with Miss Roben's or another allergy free cake mix. It would be worth a try.

Hi Shannon,
Does it matter if you use regular soda or diet soda? It seems like I've heard about this before but for whatever reason have never tried it...kind of slipped my mind. Do you just follow regular box baking directions if using the oven?

As for the cake, it doesn't matter if you use diet or regular soda. If you cook it in the oven just follow the directions on the box.

You can use any flavor cake and any flavor soda. Let me know if you try it.
