Egg Free Orange Snowball Cookies

This is our first Christmas with allergies. I make these cookies every year and as I was looking at the recipe last night I discovered they were egg free! I hope you all enjoy them.

1 c. butter softened (I used dairy free margarine)
3/4 c. powdered sugar
1 Tb. shredded orange peel
2 tsp. shredded orange peel
1 Tb. orange juice
2 & 2/3 c. flour
3/4 c. granulated sugar
1 tsp. gold edible glitter (optional)

Beat butter on for 30 sec. on high. Add powdered sugar, beat until combined. Beat in orange juice. Beat in as much of the flour as you can, then use a wooden spoon to mix in the rest. Add 1 Tb orange peel and stir in.

Shape into 1 & 1/4 in. balls. Bake at 325 for 15 min. Cool for 5 min. on cookie sheet.

Meanwhile, combine granulated sugar and 2 tsp. orange peel in food processor. Roll slightly warm, baked cookies in mixture. Makes about 4 dozen.

We've dealt with PA (DS) for 2 years now - but this will be our first Christmas dealing with MFA. (DD - egg, dairy, soy)

Thanks for sharing this recipe, I'd given up on doing any cookies this year!
