For those of us who could use a break from our New Years Resolutions [img]http://uumor.pair.com/nutalle2/peanutallergy/smile.gif[/img]
1/2 cup rice milk
1/2 cup margarine
2 cups white sugar
6 tablespoons unsweetened cocoa powder
2 tablespoons Sunbutter (optional)
3 1/2 cups rolled oats
1 teaspoon vanilla
1 cup shredded coconut (optional)
Place the rice milk, margarine, sugar, cocoa, and Sunbutter in a medium sized saucepan. Bring mixture to a full rolling boil. Boil for one minute. Remove from heat, and stir in vanilla and oats. Mix in coconut, if desired. Drop by teaspoonfuls onto waxed paper. Let stand until set.
(I recommend refrigerating to speed setting)
Yield: approx 24 cookies
