Are you picking from only 3? I live in Appleland where I have access to 15-20 varieties every apple season. Stayman Winesaps are delicious if the growing season was right (it was this year :) ), Golden Crisps are phenomenal but they're more of a late August apple. Good Macs are delicious. Really it's simply a matter of preference. You really have to try them all to find the ones you prefer.
The only ones we don't care about are Red and Golden Delicious.
We love the Gala appels. Chris has been eating this apple which is honey something. Very tastey. My kids love a green apple. Not my choice though.

Out of those three I'd pick Gala. But we usually buy Fuji. I tried Honeycrisp and didn't like them AT ALL. Maybe I got some bad ones, I don't know. We bought 5 or 6 of them and they all were equally icky. Right now we're using a bag of Golden Delicious we got from a local orchard and they are ok. Not as good as Fujis.

Have you ever tried honeycrisp? So sweet and delish! I live on them. Especially good dipped in sunbutter if there are no sunflower allergies.
