Tried this after a neighbor made a different barley salad. It is mild and a little sweet, and very fragrant with the oranges. Maybe some children might like it. My ds might, can't get dd to try it!
1.5 cups dry barley, cook according to directions(I used 1 chicken cube to add some flavor and cut back on the salt later in the recipe).
2 T. each of oil, balsamic vinegar and honey.
2/3 cup orange juice.
2 T grated orange zest(I skipped this and it is fine).
1/2 t. salt
1.5 cups spinach, packed(I used ready to use baby spinach leaves).
2 large oranges, flesh cut into bite sized pieces.
1/3 cup shaved(I diced it) red onion.
So, cook the barley like you would rice, until it is dry and fluffy. It will vary with the barley you buy. Follow directions. Mix the oil, vinegar, honey, orange juice and salt(and grated zest if you do it) and pour it over the hot barly. Toss to coat, and let it cool in refrigerator(I did overnight).
Then, before eating/serving, add the oranges, spinach and onion and toss. It is yummy!
We were going to have this for dinner, but got an invitation, so we have sampled it, and are going to bring it to the dinner. I will place it on a bed of the leftover spinach leaves for a pretty presentation. Only wish I have reserved a pretty slice or two of orange!

I wish I read your response before I left the house, Peggy. The kids eat mandarin oranges all the time and that would have been pretty. The salad went. Two children(ds and our friends' youngest dd) enjoyed it, and all of the adults. There was just a little bowl left for my friend to take for lunch, so I have made another batch tonight. I still had the other half of all the ingredients I had to purchase. It is a hot, muggy and very busy week, so I have made two big salads to eat all week! Black bean and corn is the other. They keep for a few days in the firdge and can be morphed into other things by add-ins or using as a side or topping greens, etc...
I just bought Goya brand, but I knew dd would not eat it, and I honestly do not worry too much about cross contamination with simple whole grains packed that way. But I did choose Goya because I thought I recalled posts here in favor of it as a brand. But since dd would be like your son, I was not too worried!
But if you just mean where to find barley at all, it is with bagged dried peas and beans. In my stores these are often in 2 different places. Ethnic brands have a selection, and the bean and rice isle. There are different kinds. Some look to be more "hulled" or processed. The Goya brand I got seemed to have more hull(more fiber) left on it.
There are the ins and outs of barley. I love it! Always loved beef and barley soup(just canned) as a child.
Both of my children, but especially dd, favored it in the baby cereal form. She tolerated it allergy wise the best as well. Other grains seemed to trouble her somehow(though now I even forget how). becca

I never do Barley, where do you buy it? What section?
And BTW, my son would try this only if "heck" froze over.
