I am new to posting messages on the board, but have been reading the board for some time. I have a 2 1/2 year old daughter who has many allergies. She was diagnosed at 10 months for peanuts, milk, wheat, and eggs. Since then she has also developed allergies to soy, cats, moulds and horses. It has been quite a challenge finding good recipies for her to enjoy. She is becoming more aware that she cannot have the same foods as her friends. Being a toddler, she definately has her preferences when trying different foods. I am trying to find a cake recipe for her that taste's relatively close to a typical birthday cake. We have tried recipies with different flours, and egg substitutes but have not found any that are appealing to her. She is anaphalatic to both peanuts and milk. Does anyone out there have any suggestions?

I made the dairy-free cupcake with oranges and Banana, and it was fantastic. It does have flour in it, so if your kid is allergic to wheat you may have to try a few substitutes, or look for another recipe in that list.

My son is 7 years old now and is also allergic to peanuts, cow's milk, wheat, gluten, and eggs. He is also allergic to soy but can tolerate it in small amounts. Feeding him used to be quite a challenge but we've come up with quite a few options now. Is your daughter able to tolerate goat's milk. My son is and this I am thankful for.
I make cake, cookies and pancakes all from one basic recipe and he enjoys them very much. I just change consistency and sometimes add fruit. Cookies I find work better if dough is slightly frozen.
1 1\2 cups of white rice flour
1 cup w. sugar
1 1\2 tbsp olive oil
2 tbsp baking powder (gluten free)
1 tsp salt
1 1\4 cup (approx) milk (stir into mixture until desired consistency)
1 tsp vanilla
I also make him ice cream out of goat's milk.
In blender or food processor--
2 cups of g. milk, 1 cup sugar, 1 tsp vanilla.
Pour into 9 x 13 pan, cover and freeze.
When frozen break apart mixture with a knife and again blend in blender or food processor until creamy.
Keep in plastic container in freezer.

I have a slew of recipes from a Mom of a child allergic to everything! (I'm trying to convince her to write a cookbook!)
She mailed me a bunch of recipies. I must have 30+ recipies. I will try to get them on my PC and will e-mail them if you are interested. Hopefully they will be ones you can use.
