Applesauce Drop Cookies (no wheat, egg, milk or corn)

Just thought I'd share this easy recipe
that my multiple food allergic son enjoys.

Applesauce Drop Cookies

1-1/3 cups oat flour
1/2 tsp baking soda
1/4 tsp salt (I use less; about half)
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/3 cup vegetable shortening (I substitute
this with Lighter Bake. It's a non fat
butter, oil and shortening replacer. It's
fabulous. Use 1/2 the amount the recipe
calls for)
2/3 cup sugar
3/4 cup unsweetened applesauce
1-1/2 cup rolled oats, quick cooking
After mixing we added raisins, how ever
much we want.

Preheat oven to 325 degrees. Grease
baking sheet. Mix flour, baking soda, salt,
and spices thoroughly. Mix shortening
(or Lighter Bake) and sugar until creamy.
Stir in dry ingredients. Add applesauce
and rolled oats. Mix well. Add the raisins
if you desire. Drop dough by teaspoons
onto baking sheet about 1-inch apart.
Bake about 15 minutes or until edges start
to brown. Remove from baking sheet while
still warm. Cool on rack. Makes about
5 dozen.

Calories: 35
Total fat: 1 gram (I assume 0 if using
Lighter Bake)
Cholesterol: 0
Sodium: 17 milligrams (or less if you use
less, LOL).
